Out of date goat's cheese, would you eat it and what to do with it?

Hi all,
I've just found some goat's cheese in the fridge that I bought for a change and it has obviously got lost, hidden away in the back.
It's not something I usually buy (but am happy to eat when out) and I wondered if it's still ok to eat, it's almost a week out of date.
Also what are your goat's cheese recipes? I'd like something not too fancy as I've already done a shop this week and had to pop back for forgotten stuff so don't want to have to go again if I can help it!

I would eat it, but it might smell a bit strong and be off putting.
When we have expired goats cheese, we often roast a big pile of veggies, including some tomatoes and garlic for flavour and juice, then eat them with chunks of goats cheese - it gets all soft and delicious.
Or make a goats cheese and tomato tart if you have some puff pastry in the freezer.

That sounds lovely bling, the roasted veggies. So you roast the veg and then put the cheese on it when still hot to soften, you don't actually put the cheese in the oven?

Yes - that's exactly right. Big pile of roasted veg (with couscous if we haven't done any potatoes, without if we have) and then we scatter blobs of the cheese on top.
Delicious.
Particularly good with strong root veggies like butternut and sweet potatoe and beetroot.

Hi Bling,
I ended up doing a variation of your idea, I had some diced pork that needed using so I put the pork, onion, carrots, sweet potato, tomatoes, loads of seasoning and dried herbs in to a baking dish and cooked until the veggies were done, then I laid some chopped coriander on top of the tomatoes (I'd cut them in half, seed side up), then put the goats cheese on top of the coriander. Back in the oven for a few minutes. Job was a good 'un!
