Brrr! It’s cool outside! When the weather becomes chilly, there’s nothing more comforting than a nice warm bowl of chicken chili.
You can make this skinny slow cooker Chicken Chili recipe in no time, and the slow cooker is so convenient for busy days. Simply throw all of the ingredients in the slow cooker before leaving for work or school, and when you come back home…say “ahh.” When you open the door, your senses can’t miss the fact that a delicious, and satisfying dinner is ready to be served.
Ready for the magic? It all starts with colorful bell peppers, some beans, tomatoes, boneless, skinless chicken breasts, and a crock pot.

I close my eyes and imagine this delicious Skinny Slow Cooker Chicken Chili recipe with all the flavors of cumin, paprika, and chili powder. I open my eyes, mix all the ingredients, and turn on the magic appliance.

Adding Kidney Beans to Chili
Kidney beans are a great option if you’re looking to add some heartiness and protein to your Skinny Slow Cooker Chicken Chili Recipe. They are a great addition to any dishes, The amount of kidney beans you add to your chili depends on how thick and hearty you want it to be. If you’re looking for a soupier chili, one can of kidney beans will suffice. If you want a thicker chili you may want to add more beans.I prefer a stew-more-like chili.
Please note that if you’re using dry kidney beans, you will need to soak them first before adding them to your chili. To soak the beans, place them in a large bowl and cover them with water. Allow them to soak for at least 8 hours, or overnight.Drain and rinse them before adding them to your chili.
Dried, cooked beans retain their shape better. If using canned beans for their convenience—and everybody can use a little convenience—make sure you rinse them very well.

Ingredients
3 garlic cloves, chopped
1 medium onion, chopped
1 red bell pepper, diced
1 green pepper, diced
2 16-oz cans of any beans, drained and rinsed
1 8-oz can tomato sauce
1 Tablespoon cumin
½ teaspoon paprika
1 Tablespoon chili powder
1 28-oz can of diced tomatoes, undrained
3 chicken breasts, skinless and boneless
Fresh cilantro for garnish.
Directions
- Combine garlic, onions, peppers, beans, tomato sauce, cumin, paprika, chili powder, and diced tomatoes in a slow cooker.
- Place chicken breasts on top and cover.
- Cook on high for 4 hours or on low for 8 hours
- Before serving, remove the chicken and shred it. Return chicken to slow cooker and stir in. Garnish with cilantro.
