Ingredients

  • 1lbextra lean ground chicken450 g
  • 1extra large egg
  • ⅓cupzucchinifinely grated (about 1 small zucchini)
  • ⅓cupsweet corn kernelsdrained and rinsed
  • ⅓cupblack beansdrained and rinsed
  • ½tspground cumin
  • ½tspchili powder
  • ½tspsweet paprika
  • ¼tspCayenne peppermore or less to taste
  • ½tspground coriander
  • 1tspgarlic powder
  • 1tsponion powder
  • 1tspolive oil
  • salt to taste
  • guacamoleto serve (optional)

Instructions

  1. In a bowl, add chicken, egg, zucchini, sweet corn, black beans and spices (except salt). Mix until well combined, with a fork or your hands.

  2. Use your wet hands to form 2 to 2.5 inch wide patties (you'll get about 7). The mixture will be quite runny but the patties hold together very well when cooking, no worries!

  3. Heat olive oil in a non-stick skillet over high heat. When hot, add about 4 or 5 patties, making sure you don't overcrowd the skillet. Reduce heat to medium-low and cook for 5 minutes. Flip patties and cook for another 5 minutes. You want to cook them gently, so they are brown on the outside and cooked all the way through inside.

  4. Repeat with remaining patties, adding olive oil if needed. Serve them warm with guacamole if using (not included in the nutrition facts).

Recipe Notes

You can use extra lean beef instead of chicken, it's delicious too! I'm pretty sure it would also work with ground turkey but I haven't tried that variation.

Look how adorable those patties are! Healthy and magnificent!

  2. Sara

Are these freezer friendly? Before or after cooking?

    • marie

They are perfect for freezing! I froze them after cooking. Defrost the night before and reheat them in the skillet, the oven or the microwave. Super easy and fresh.

  3. Melissa

I made this recipe just now. These burgers are so juicy, tender, and delicious! Thank you for this yummy new meal idea!

    • Marie

So glad to hear Melissa, thank you!! 🙂

  4. layla

Can you bake these instead of frying them? or would it lose the flavor?

    • Marie

You could but they wouldn't be as crispy and interesting 😉 They're fried with a minimal amount of oil, if that's what you're worried about 🙂

Love the grated zucchini trick! And the spice blend is right down my alley! All the flavor of comfort food without the added carbs and empty calories!
