Do you have a breakfast or brunch coming up and need a tasty and impressive component? This deliciousvegetarian quiche recipe might be just what you are looking for. I love to make this quiche just so I can have leftovers to grab from the refrigerator every morning.

This is a recipe from my mother-in-law, and we made it for a brunch peach and gold baby shower I co-hosted for my sister-in-law. She is known for her pie crusts!

The quiche was a hit. If you are looking for a non-vegetarian option as well, you should definitely try my swiss and bacon quiche.

Delicious Vegetarian Quiche Recipe

I was always intimidated by pie crusts until I got my hands on my mother-in-law’s recipe and sat in her kitchen to learn her technique. The ingredients are simple, but there is a bit of an art to the process.

Ingredients Needed to Make this Incredible Vegetarian Quiche

  • 9″ Pie Crust, unbaked in pie plate
  • 1 cup Shredded Swiss Cheese
  • 1 cup Shredded Cheddar Cheese
  • 1 cup Broccoli, lightly steamed
  • 1/3 cup Red Pepper, diced
  • 4 Eggs
  • 1 1/2 cup Milk
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 1/8 tsp Onion Salt

How to Make this Vegetarian Quiche

  • Heat oven to 400.

  • Make your pie crust.
  • Dice and chop vegetables.
  • Steam broccoli. To steam broccoli in the microwave, simply add 1-2 inches of water in a microwave-safe bowl. Add the broccoli to the bowl and put a microwave-safe plate over the top. Microwave for 3 minutes. Take it out, strain the water and run cold water over the top. Then, pat dry with a paper towel.
  • Combine cheeses, broccoli, and red pepper in pie crust.

  • Beat remaining ingredients until smooth.

  • Pour into pie plate over other ingredients.

  • Bake 35-40 minutes.

  • Let stand for 5 minutes before serving.

Should Vegetables be Cooked Before Putting in a Quiche?

In this recipe, the broccoli should be lightly steamed, but the peppers and green onions can go in raw. That said, if you want to take the extra step to saute the peppers, it does impart a bit more flavor. I like the ease of throwing them in with less dishes. If you add mushrooms or potatoes to a quiche, they should be cooked. A light steam on heartier vegetables like broccoli or asparagus is good.

Are Quiches Healthy?

If you are looking for keto-friendly or low-carb breakfast options, this is NOT the dish for you. You could try this amazing breakfast frittata.

This quiche is packed full of vegetables, which is always good for a diet. At 342 calories, it’s a fairly low-calorie breakfast option. This quiche also provides a great balance of carbohydrates, diary, and protein.

The pie crust does have shortening, which may be a no on some people’s list. The shortening provides a flakier crust, but if you want a butter-based pie crust, this one looks like a good option.

Although I wouldn’t call quiches perfectly healthy, I believe this one would receive a fairly high health rating.

What Vegetables Go with Quiches?

The great thing about a vegetable quiche is that it is very flexible for mixing things up and throwing in your favorite vegetables. The crust and egg mixture can stay the same, but then you can play with the vegetable combination. Vegetables that go well in quiche include peppers, green onions, red peppers, mushrooms, asparagus, artichoke, carrots, spinach and tomatoes.

Is a Frozen Pie Crust as Good as Homemade One?

Of course, to make a great quiche, you need to start with a great pie crust. You can always buy frozen at the store, and that works.

However, we decided to do a bit of a back-to-back taste test. We tried a frozen crust next to a homemade crust, and I thought there was no comparison. I’d go fresh.

That said, I know we are all busy, and I completely understand and won’t tell a soul if you buy a frozen one.
